]]>I know that fall is just around the corner, but with this week’s heat wave, I just can’t think about pumpkin just yet.
Besides, I’m still trying to use up the zucchini in my refrigerator.
So today we’re making some perfect zucchini muffins. They are moist and flavorful, with a crunchy sugar top that I can’t get enough of. My neighbors totally felt the same way when I shared some of these babies with them!

]]>I’m a zucchini lover that lives with zucchini haters, so most of the time I end up hiding zucchini in baked goods like zucchini cookies and chocolate zucchini cake.
But sometimes I say “screw it” and make something savory out of zucchini just for myself to enjoy.
I might have been the only person in my family who liked these air fryer zucchini chips, but that didn’t stop me from making them and enjoying them all by myself. They’re perfectly crispy and the seasoned breading pairs so well with the mild zucchini.

]]>I have what is basically the opposite of a green thumb.
What I’m sayin’ is that I can’t keep plants alive. I’ve been known to kill mint and rosemary. And that, friends, takes a special kind of talent.
My mom seems to plop plants into dirt, sorta takes care of them, and she’s left with gorgeous tomatoes, pretty peppers, and more zucchini than anyone can eat in a season.
And where does that zucchini end up? On my kitchen counter. Where it gets turned into baked goods, like this lemon zucchini cake, for all of you!

]]>Are you a muffin kind of person? I totally am, but most of the time, I prefer muffin tops.
Yep, I’m the girl at Starbucks ordering one of their giant blueberry muffins and tossing the entire bottom of the muffin into the trash. It’s wasteful, I know.
I’ve tried to pawn the muffin bottoms off on Elle by over-exaggerating their level of deliciousness, but the girl knows what’s up; she’s not having it.
Then there are the muffins at our local grocery store that are to die for good! Okay, that’s a minor exaggeration, but you feel me, right?
Their pistachio muffins are LOADED with chopped pistachios and topped with a ridiculous amount of sparkling sugar. But guess what, once that crunchy sugar and perfectly golden top are gone, I’m out.
My husband does the same thing, only with chocolate glazed donuts. He slices them in half like a bagel so he can simply enjoy all that chocolate frosting goodness with a wee little bit of donut. I’m typically intercepting him on the way to the trash like, ummm, gimme that. Because carbs.
There are a few muffins that I’ll enjoy in their entirety and one of them happens to be these morning glory muffins.

]]>Alright, I’m finally almost ready to embrace fall.
Even though the afternoons are still a bit warm and humid around here, the mornings are starting to be nice and cool. With school in session and Labor Day over, it’s starting to feel more like fall.
So to continue to ease us into the season, I’m taking some of the last of my summer zucchini and putting in this zucchini cake with maple cream cheese frosting.
It’s a little hybrid of summer and fall, with the zucchini pairing with fall spices, ginger, and maple.
It’s a simple cake that you can whip up quickly, so it’s perfect for guests or just because you’re craving cake on a Thursday afternoon.

]]>I am well aware that tomorrow is September 1st. I know that Starbucks and Dunkin’ Donuts already launched their pumpkin spice drinks.
But I still need a few more days before I can fully let go of summer and enjoy pumpkin bread, butternut squash bread, and even apple fritter bread.
I’m still over here trying to use up the zucchini that keeps appearing on my front porch. So hopefully you can forgive me for still being all in on recipes like zucchini banana bread, classic zucchini bread, chocolate zucchini muffins, and this chocolate zucchini bread.
Trust me – soon enough I’ll be bundled up in flannel scarves, drinking all of the homemade pumpkin spice lattes, and eating all of the pumpkin scones I can get my hands on.

]]>Although it’s only mid-August, my social feeds are full of pumpkin and apple recipes already and I’m over here like, can we just enjoy the last couple of weeks of summer?
While I can’t get behind the pumpkin recipes just yet (gimme two weeks), I can totally get behind the zucchini recipes, especially when my neighbors passed along two of them straight from their garden last week.
This chocolate zucchini cake is rich and delicious and I promise you, even my zucchini-hating husband had no idea it was packed with over 2 cups of freshly grated zucchini!

]]>I cannot garden to save my life. Seriously, I kill mint. Those of you who garden know that mint is often deemed “unkillable,” if that’s even a word.
Mint is definitely not unkillable. I‘ve killed it – several times.
But for some reason I always think my black thumb will turn a pretty shade of green every single spring – that I’ll miraculously transform into some kind of amazing farmer.
Well, folks that doesn’t happen – ever.
So despite my best efforts year after year, I’m pretty much gardenless and have to rely on veggies from our friends or the farmers market.
Thankfully, I still always end up with plenty of zucchini because it seems to grow like mint for everyone but me.

]]>This whole staying at home situation has basically turned me into a small scale farmer and sourdough bread baker.
I have mentioned numerous times that I can barely keep air plants and succulents alive. Needless to say, gardening is most definitely not my forte.
However, this summer I’ve had all the time in the world to tend to my little garden and I’m proud to say that I’ve only lost one tomato plant and some cilantro. Guys, this is a pretty big deal considering I have a history of killing mint.
I honestly don’t even like tomatoes, but my local greenhouse had some container tomatoes that caught my eye, so I figured I’d give them a go and just load my tomato-loving dad all summer long.
Since I know I can actually keep things alive, I’ve got big plans for next season including cucumbers, more herbs and zucchini.

]]>You guys, I swear I say this every single year, but I am trying to get ahead and stay organized with my holiday shopping.
Last year, I put forth quite the effort for about a week and then failed miserably and ended up shopping on Christmas Eve and wrapping gifts until about 2am.
Not this year, folks. I’m sitting at my computer right now monitoring Cyber Monday deals because this girl is not a Black Friday shopper. In fact, I’m not much of an in-person shopper period, unless we’re talking Target!
So I’m dedicating this day to tackling my shopping list while watching big, fluffy snowflakes swirl around outside!
