Snickerdoodle Bars are loaded with delicious spices and drizzled with a sweet vanilla icing. They’re perfect for dessert, or with your morning cup of coffee.
If you follow MBA on a regular basis, you may have noticed that things have been a little quiet in my neck of the woods. While I’d love to say that I’ve been away on an amazing tropical vacation, that’s so far from the truth, I could actually get a little weepy about it. I’ve been stuck here in frigid, snowy Ohio packing all the things in our house.
Guys, packing is for the birds. We’ve already filled a storage unit near our new home and our current house has been taken over by boxes, bubble wrap and strips of packing tape hanging from random places. Add in a crawling baby that is obsessed with boxes and tape and it’s pretty much a recipe for a disaster-laden disaster with a disaster filling. People told me packing was easy, so clearly they’re all a bunch of liars because it’s the worst! I’ve decided that if we ever move again, we’re hiring a crew to do it.
Although my kitchen is in shambles, I am still managing to whip up a little deliciousness here and there. And let me tell you , there’s nothing like a sweet treat amidst chaos and bubble wrap. I have long been obsessed with all things snickerdoodle. From snickerdoodle cookies and snickerdoodle cake to these bars, I just can’t get enough. And since I have a full on obsession with pumpkin pie spice, I swapped my homemade blend in for the typical cinnamon. It adds a whole extra layer of depth that will surprise people – and what’s baking for other people without their accolades, amiright?
Along with packing, I may be eating my feelings about how stressful all of this. Forget healthy January, you guys. Ain’t nobody in this house got time for that. Snickerdoodle bars packed full of spicy flavors and a delectable sweet glaze is where January is at. If you’re with me on this, make these babies immediately. I promise, the cold, wintery landscape outside will seem much more bearable after a bite or two.

Snickerdoodle Bars
Ingredients
- 2 ⅓ cups all-purpose flour
- 1 ¼ teaspoons baking powder
- ½ teaspoon salt
- ¾ cup unsalted butter softened (I used Challenge Butter)
- 1 ¼ cups granulated sugar
- ½ cup packed light brown sugar
- 3 large eggs
- 1 teaspoon pure vanilla extract
For the Filling
- 1 tablespoon granulated sugar
- 1 tablespoon homemade pumpkin pie spice
For the Glaze
- 1 cup powdered sugar sifted
- 1 to 2 tablespoons milk
- ¼ teaspoon pure vanilla extract
Instructions
- 1. Preheat oven to 350° F. Line the bottom of a 13x9-inch baking pan with parchment paper or spray the pan with nonstick cooking spray.
- 2. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
- 3. In the bowl of a stand mixer fitted with the paddle attachment, or in a large bowl with an electric mixer, beat butter on medium speed for about 2 minutes. Add in sugars and beat for an additional 2 minutes. Add in eggs and vanilla and mix until thoroughly combined. Turn the mixer to low speed and gradually add in dry ingredients, mixing until just combined.
- 4. Spoon half the batter into pan and use an offset spatula to spread evenly. In a small bowl, stir together the sugar and pumpkin pie spice. Sprinkle the pumpkin pie spice mixture evenly over batter.
- 5. Spoon teaspoon size amounts of remaining batter evenly over pumpkin pie spice mixture.
- 6. Bake in preheated oven for 20 to 25 minutes or until golden brown and toothpick inserted in center comes out clean. Cool completely.
- 7. In small bowl, whisk together the powdered sugar, milk and vanilla until smooth. Use a spoon to drizzle the glaze over the bars.

Hi, I just made these, and am now in the torturous “waiting for them to cool” stage. They smell wonderful. I had to use way more than half to get them to cover the 9 x 13 pan, though. Next time I might bump up the recipe by a third.

Yes, packing is the worst EVER. I told my husband the same thing- next time we move I am not touching a single box! Happy to report that unpacking is way easier (minus having to figure out how you are going to get rid of all the boxes and packing material!) These bars look great, can’t wait to try them.
