I came across this carrot bundt cake recipe in a bit of a strange way. 

My right-hand woman Stephie sent me a TikTok telling a story from Reddit of how a carrot cake recipe was threatening to pull a family apart. And it just so happened that the Redditor shared the recipe in their post.

Well, you know that I was curious and had to try this cake. 

I ended up making a couple of tweaks, including turning it into a bundt cake, but the end result is one great carrot cake recipe that would be an amazing addition to your Easter menu.

My dad is pretty much a chocolate fanatic – the darker and richer the better. He loves bananas, too. So it only seemed natural that the first time I made this banana bundt cake finished with satiny chocolate ganache was for his birthday.

When you become a parent, you learn to become a big fan of sprinkles.

I don’t think I’ve ever met a kid who didn’t love sprinkles. There’s a reason that funfetti cupcakes are always a hit at a kid’s birthday party! 

So I was really excited when I made this easy vanilla bundt cake, topped it with cream cheese frosting, and finished it with rainbow sprinkles and realized it looked like a giant donut. I knew Elle would be super excited about it, too.

I think it would be equally adorable with different seasonal sprinkles, too – orange and black for Halloween, red and green or shades of blue for the winter holidays, or even greens for St. Patrick’s Day.

Life really is more fun with sprinkles and cake.

I have what is basically the opposite of a green thumb.

What I’m sayin’ is that I can’t keep plants alive. I’ve been known to kill mint and rosemary. And that, friends, takes a special kind of talent.

My mom seems to plop plants into dirt, sorta takes care of them, and she’s left with gorgeous tomatoes, pretty peppers, and more zucchini than anyone can eat in a season.

Every time I share a recipe on social media that starts with a cake mix, I get someone commenting something along the lines of: It’s not baking if you use a boxed mix!

I’m here to tell you that it is baking. You end up with a delicious cake or cupcakes or cookies…tell me how that isn’t baking?

There are tons of reasons why someone might choose to bake with a mix, and all of them are valid. Whether they are a beginner baker, are short on time, or don’t have the dexterity to measure out a ton of ingredients, it doesn’t matter.

Bundt cakes will forever remind me of my Nana. Not because she made a ton of bundt cakes, but because – in my mind – bundt cakes are a bit retro.

Don’t get me wrong, I love them to pieces and have definitely made my fair share of them over the years. From chocolate bundt cake to whipping cream cake to my pumpkin bundt cake, let’s just say I get good use out of my bundt pan.
