]]>We put in a pool a couple of summers ago and that means that Elle’s friends are over all of the time to swim. And there’s nothing that kids love more during the summer than a frozen treat.
Sometimes I’ll make a batch of strawberry popsicles, birthday cake ice cream, or rocky road ice cream, but lately I will grab a box of classic, cheap-o ice cream sandwiches and toss together this super simple but super delicious ice cream sandwich cake.
It’s basically the perfect kid summer dessert, but don’t think that adults don’t love it as well.
If you’re looking for a way to keep the kids (and adults) happy this summer, this is it.

Whether it’s rocky road ice cream, peach ice cream, or key lime pie ice cream, digging into ice cream that you made yourself will make you feel like a little kid again.
But what if you can’t do dairy, or simply want a lighter frozen dessert option?
That’s where sorbets come in.
This lemon sorbet is like eating frozen lemonade. It’s perfectly tart, cold, creamy, and totally refreshing. It’s everything you want on a hot summer day!

If you happen to live in Ohio, you know that us Ohioans are usually complaining that it’s either too hot or too cold and rarely is it just right.
My idea of just right falls around 78 degrees with loads of sunshine and a nice breeze.
Despite cooler temperatures the past few days, this week is supposed to be a “scorcher” according to our local news station.
Although we have the freezer stocked with ice pops, rocket pops and even homemade Strawberry Popsicles for those long pool days, I thought I’d whip up a batch of ice cream or two for a little variety.

If you’re a parent or grandparent, you know that summer is prime popsicle time.
As soon as the heat hits, I know we have to keep the freezer stocked with popsicles, even if it’s just a box of freeze pops, alongside containers of rocky road ice cream and no-churn ice cream.
I mean, there’s nothing better after getting out of the pool on a hot summer day than lounging with a popsicle in hand.
Even though I love fancy-pants popsicles like roasted berry goat cheese popsicles, prosecco popsicles (for the adults), and banana split popsicles, sometimes I just want to stock the freezer with something super classic.
These strawberry popsicles are being made on repeat this summer. They are just as easy as running out to buy a box of popsicles and are easily a top craving around here right now.

It seems like these days you are never too far away from great ice cream, whether you’re having it shipped to your house or there’s a new boutique ice cream shop opening up in your town.
But just because it’s easy to find great ice cream doesn’t mean I don’t also like making great ice cream at home.
And the absolute easiest way to make a batch of flavorful, creamy ice cream at home? This no-churn ice cream recipe. It’s great in a cone, made into an ice cream sundae, or scooped on top of a slice of apple crumb pie or rhubarb pie.

]]>It’s been so hot here the last few days that I’ve barely turned on my oven. And to be quite honest with you, nothing has even sounded remotely appealing.
When it’s this hot, I’m all about watermelon, cantaloupe, frozen grapes and cold sandwiches, so I’ve been on a bit of a baking hiatus except for testing a few things coming your way this fall.
One thing I can handle making though is ice cream. Especially when it’s Key Lime Pie flavored ice cream!
