Long-time MBA readers know how much I love mini desserts. I have made all kinds of mini cheesecakes, mini bundt cakes, and even mini cinnamon rolls over the years. 

These mini fruit tarts are my newest mini dessert love affair. With the buttery tart shell, luscious vanilla pudding, and bright, fresh fruit, they are a whole lot of goodness in a single bite (or two).

Since I made these during the summer I was able to use a whole variety of my favorite fruits, but I can’t wait to try a berry version, a tropical fruit version, and even a citrusy version during the winter months.

Coffee cake is such a versatile thing to make. I mean, it’s hard to find another baked good that is socially acceptable to eat for breakfast, afternoon snack, or dessert. 

Whether it’s a classic cinnamon coffee cake, pumpkin coffee cake in the fall, or a lemony blueberry coffee cake in the spring, I love them all.

This easy peach coffee cake is my newest addition to that list. It uses just a handful of pantry staples but turns them into a perfectly light, moist, peach-packed cake. Plus, since it uses canned peaches, it can be made any time of year!

One of our favorite summer fruits is peaches. However, the ones that we typically purchase from the grocery store here in Ohio are totally hit or miss. 

Some are delicious and some are bland and mealy. If you’ve ever bitten into a mealy peach, you know why my daughter thought she disliked fresh peaches for an entire summer when she was around 3. 

A few years ago, we ordered fresh peaches from The Peach Truck, but your girl is not made to wait in long lines to pick up a crate of peaches that seemingly go bad within a few days, so I wisened up and ordered a dozen at a time from their website along with their peach jam.

I know mail order peaches may seem a little ridiculous to some, but to us, those peaches are worth every single penny. And if you’ve ever had one, you know exactly what I am talking about – they are truly peach perfection. 

We typically enjoy the peaches fresh, but we also love whipping up peach desserts like these simple grilled peaches. Top them off with ice cream or whipped cream for a sweet and delicious summer dessert.

Have you ever gotten peaches from The Peach Truck? We’re big peach fans in this household and we’ve never had better peaches than the ones we’ve purchased from them. Only this year, they didn’t come to our town, so we opted for home delivery.

Every once in a while, I come across a recipe that I’m almost embarrassed to share with you because it’s just too simple.

My step-mom called me a couple of weeks ago asking if I had a recipe for peach cobbler made with Bisquick.

If you follow along here pretty regularly, you might know that I have a recipe for Homemade Bisquick, Bisquick Pancakes and even Bisquick Biscuits, but no Bisquick Peach Cobbler.

She was making Peach Cobbler for a friend and ended up trying a bunch of recipes before she called me with this one. And when I say it’s easy, I mean it – the assembly might take you three minutes!

When she raved about how good it was, I had to test it for myself and ended up making 2 times in less than a week.

Summer in our neck of the woods is unofficially over already. The kids went back to school two weeks ago and even the weather got the memo because the temperature dropped 15 degrees overnight.

But just because the school already has us on a schedule, doesn’t mean I’m ready to give summer up just yet. The calendar still tells me we have a few more weeks of summer and the sun is still shining. I am planning to squeeze every drop of summer out of these last warm weeks that I can.

I normally go for bar recipes that use the same mixture for the crust and topping, like these caramel apple cheesecake bars. They’re just simpler! Having one less bowl to clean is always a good thing, right?

Well, these peach crumb bars aren’t one of those recipes. You have to make a separate crust and topping. It’s worth the extra step, though – I promise! It really only takes an extra three minutes to make the topping and you can reuse the bowl you used to make the crust.
